I'm glad you enjoy the texture of spiny sea cucumber. Maybe one of these days you'll also get a chance to try the bigger variety of sea cucumber (大乌参), one of the best ways to prepare it is braised with dried shrimp roe (虾子大乌参). it's an actual Shanghainese dish as opposed to most Shanghainese dish that originated all over the Jiangnan region (and quite a few "upxed" via Hong Kong's Shanghainese cuisine scene with added Cantonese methodology, HK Cantonese being a fusion of Shunde, Guangzhou, Chaozhou, Hakka mix from all the immigrants). Although you may also want to check the price tag of that before ordering as true large sea cucumbers (dried) are way more expensive than these spiny ones from Dalian (actual source could be from North Korea).

There are many stories about how the name 佛跳墙 (fo tiao qiang Buddha Jumping over the wall) came about. Based on chefs that does it the most traditional way and learned from secrets passed down over many generations. I have heard several of them calling it 福寿全 (Fu Shou Quan meaning to have both good fortune and long life). When saying it in the Fujian dialect it sounded like Buddha Jumping over the wall in Mandarin.

美国中餐是广东人带去的,福州菜只有荔枝肉偏甜,还有醉排骨甜酸。其他菜是正常的,蒸鱼,炒牛肉,炖鸡鸭猪排汤都不是甜的,口味非常淡的,我是福州人都嫌弃甜味的菜,但很喜欢醉排骨。

That is a premium quality baby sea cucumber. and it is the most expensive of the ingredients that I see in your BJOTW If I accidentally drop it on the floor, tbh I will pick it up n wash it in 2 glasses of hot water then eat it. Too expensive n good stuff to waste it This is what I do if the restaurant dont offer to replace it
Ps how come I dont see whole dried scallop pieces as dried scallops are one the essential ingredients used to boil the BJOTW soup

以前在沈阳上班的时候几乎每个星期天公司都会去酒店聚餐,每次都会点这个佛跳墙,一开始不知道是个什么东西,只觉得超级难吃,,后来知道了这个玩意多贵以后,虽然还是觉得难吃,但是每次都会强忍着吃完。说实话如果不知道价格的话,会感觉味道不咋地。。但是一想到价格这么贵,就感觉似乎也有那么一点点好吃了。。。
