Chinese, mostly. Sometimes I'll switch to EN or JP, especially when Albedo is on the team (I understand that it's the original, but his CN voice is just... not it).
Overall, I think it's like that: CN has a lot of voices I like the most, JP has no voices I dislike, and EN is somewhere in-between, most are alright, Zhongli is godly, Albedo and Itto are really good, but I can't stand EN Venti.

I only play with Japanese voices since I'm a weeb, But I really like Zhongli,Tohma and Itto's EN voices, and Paimon's CN voice. Haven't heard the korean version yet, and I bet if Genshin ever gets a Brazilian Portuguese dub, I'll like it too since I really like our voice actors here. I'll stick with the JP version to the end though. I just cannot imagine Hu Tao without Rieri's voice nor Ayaka without Saori's voice, and I am in the hopium some other big name seiyuus will come to the project like Kamiya Hiroshi to voice Dottore.

JP. I've watched enough Japanese stuff to catch tone changes and other subtleties which I struggle with in Chinese. EN voices are hit or miss for me. Especially because I main Xiao and don't really like his EN voice lines. I also have Beidou and Qiqi and their JP voices are AWESOME!! I also can't tolerate Paimon in English.

Also this isn’t the early 2000’s anymore where EN dubs are trash even though there seems to always be a huge amount of people who seem to still believe this.

I like the EN voices of some characters like Zhongli and Dainsleif but for the rest I prefer the JP dub. Maybe cause I’m just used to listening anime subbed and I also speak Japanese, though I prefer the text in English cause kanjis are a pain.

Individually, it'd be much more complicated but overall, I like English a lot due to really being the language I'm most familiar with and everyone brings this whole experience into feeling a lot more immersive.
Also don't forget about Korean cause I'm pretty sure there are plenty of players who enjoys that option a lot more.

I don't think that anyone who bothered to listen to English thinks it has the quality of 2002 dub anime. Well, yea, exceptions exist, but I don't think most of the jp voice people choose the language because they think English sucks.
Genshin just has so many great jp voice actors, that it can be hard to pass for some who are already used to them. Like I don't know the English voice actors, definitely because I don't have much chances to watch stuff where they appear, but with Japanese I hear so many familiar voices. So I just prefer that.
However that doesn't say I dislike the English, Zhongli and Albedo for example have spectacular voices and it's a pity I can't choose language for a specific characters.
Also you kind of forgot there are Chinese and Korean voices, it's not just EN vs JP. They are all great though, if someone actually bothered to listen to all of them.

I've liked a lot of what I've heard from the other languages, but JP just tickles my fancy the best. So many of the actors feel like they embody the character to me. Characters like Xiao, Klee, and Raiden in particular just feel like the perfect voice casting job possible.
EN Itto is absolutely fantastic. I adore how much life he puts into the character. It's clear he had a good time in the studio
