Almost all oil will work, like rapeseed oil, peanut oil or sunflower oil. Those are very commonly used Chinese cooking. I will add a little bit of chili pepper or sichuan pepper when heating the oil. Adds more flavor to the oil.

I'm a huge fan of that baking soda technique! I've used it frequently before on tougher cuts of beef and/or pork for stir fry. I love the tender texture it produces. It never would have occurred to me to use it on an already tender protein like shrimp though. Sounds like it's experimenting time!

I like this episode! I never saw asparagus in my hometown (Northern China) until I came to the U.S. Never know how to cook them properly but I absolutely love asparagus! Love this one!

Peel the asparagus, especially the rough stem part. Peel until your see the tender and white inner stem, and they taste great. The very last bit of wooden part could be discarded though.

I love level 3 MuXuRou, looks delicious. MSG can be left out, most chinese homemade deshes don't add MSG(only restaraunts use MSG most of the time), the taste of oyster sauce and sesame oil already substitute MSG.
