Manufacturers still do.
It’s just they don’t do it in volumes like they used to 10–20 years ago.
But look at where retro themes come from, and where the market is. The themes are traditionally around 40 years behind the present day - so in 2005, 1965 was the peak “style” influence for many new retro models. Why? Because those people who lusted after those cars as teenagers now have the finances to easily go buy the new retro models and re-live their youth.
Problem is, 40 years ago is now 1981. What models were lusted over in 1981? Not many right? The car industry went through tough times in the 70s, as muscle cars faded out, and performance was killed off due to emissions targets. There was nothing left in mainstream models to inspire the youth, and a far smaller percentage of the growing population were into cars. Trucks started to become the vehicle youths wanted in the 80s.
And like the T-bird retro harking back 40 years, and the Mustang also inspired by a 40 year old model, Ford have once again looked back - this time a little more than 40 years, and used that inspiration for the new Bronco.
But apart from a handful of models (Challenger/Charger, Mustang & Camaro) the retro theme simply isn’t profitable for manufacturers who need to sell 100-200K+ vehicles of that model annually to make it viable. This is the whole reason GM-Holden no longer exists - they couldn’t make and sell enough annual volume to stay profitable.

In one word: Regulations.
This has been discussed many many times on Quora, and it boils down to the existence of regulations that didn’t exist “back in the day”, especially safety and emissions regulations.
When automakers have put out “retro styled” models that are “vintage inspired” but on modern platforms, with rare exceptions (‘05-’14 Mustang, the current Dodge Challenger, ‘10-up Camaro) they have been at best niche players and haven’t inspired the kind of sustained following the original period models have.
And even the “successful” retro cars are considerably different than the originals they’re inspired by. Park a current Challenger next to an early ’70s model and you can see just how different they are - the original looks like a 3/4-scale model of the modern one. And weighs about 3/4 as much, as it happens. Same goes for the Mustang. I have a ‘65, a ‘99, and a ’12 in my garage and driveway, and the contrast in size is epic. The ’99 is larger in almost every way than the ‘65, and the ’12 makes the ’99 look like a kid’s toy.
So in the present day, the only real “retro” cars available in the US are the Challenger and the Camaro (the ‘15-up Mustang is not a retro design), and of course the Porsche 911 is eternal - but even so, park a ’21 next to a ’65 and while you can see they’re related.

Lack of resources - with currently microchips and general raw materials being in such shortage due to impacts in supply chains, the cost to design, develop and launch a new vehicle becomes too cost prohibitive. Better to improve existing cars, and sell more of those than start again from scratch.

No demand! Car companies in the US are offering what sells, Trucks, Crossovers and SUVs. Minivans appear to be hanging on by offering the most passenger space in the smallest footprint and truck like utility on the weekend by folding the seats down for the Home Depot / Costco run.
They also offer hybrid variations on the above models with hopes they sell. The investment in Battery Electric and Hybrid models must be consuming most of the financial resources needed to build modern vintage inspired models.
Chevrolet offers two uninspired cars (Malibu and Spark) and two sports cars (Camaro and Corvette). The nearest thing to vintage is the Camaro. Sales have not been strong for several years and 2020 sales were dismal due to Covid. This may make Camaro survival, let alone an upxe. The Corvette was vintage until 2020, when the C8 adopted the modern high performance car mid-engine layout.
Stellantis (formerly Fiat Chrysler Automobiles) has long offered two Dodge brand muscle cars which are vintage looking with a single modern feature, 800+ horsepower which inspires many of us.

There is probably such a small market for them that it’s not a financially viable product. I think anyone interested in a particular model vintage car would want the real deal, an actual vintage car from a vintage year, rather than a modern look alike version. There are a lot of vintage cars still available, and for a relatively low price. If you were an art collector, and had the money, would you buy the original Mona Lisa, or a knock off because it was cheaper? People with the kind of money it takes to buy retro obxts won’t settle for a copy, they want the real item. I sometimes dream of being that rich, but dreaming is as close as I’ll ever get. It must be a hard life being rich, with the high taxes wealth brings.

Retro styled cars have always been hit and miss. Retro was a big thing in the 90s and 00s with every company raiding its history for inspiration.
Currently the Mini and FIAT 500 are both big sellers in both petrol and electric. Honda has entered the electric car market with the Honda E.
America has the Mustang, Challenger, Charger and Camaro which so echo 60s designs.
There are perennial favourites like the MX5 and 911 that are more continuations than retro these days. One could argue the VW Golf and Polo fit a similar pattern to Porsche as the designs have evolved over time.

They've pretty much been there, done that, and moved on in terms of vintage “inspired” vehicles, which I take to mean “retro”. Ford, GM, and Chrysler (Group) all introduced retro versions of their muscle car/ponycars in the mid 2000s, with the Mustang, Camaro, and Challenger. Chrysler and GM took it one step further with their compact SUVs (PT Cruiser and Chevy HHR). The PT cruiser and HHR (along with its pickup truck sibling the SSR) ran their course and were discontinued some years later.
It seems to have been a passing fad, and now the car-buying public has moved on, once again saying “out with the old, in with the new”, preferring ultra-modern over the retro look that is “so 'yesterday’”.

They've pretty much been there, done that, and moved on in terms of vintage “inspired” vehicles, which I take to mean “retro”. Ford, GM, and Chrysler (Group) all introduced retro versions of their muscle car/ponycars in the mid 2000s, with the Mustang, Camaro, and Challenger. Chrysler and GM took it one step further with their compact SUVs (PT Cruiser and Chevy HHR). The PT cruiser and HHR (along with its pickup truck sibling the SSR) ran their course and were discontinued some years later.
It seems to have been a passing fad, and now the car-buying public has moved on, once again saying “out with the old, in with the new”, preferring ultra-modern over the retro look that is “so 'yesterday’”.

Did you not see the new Bronco (retro styled off the 1972 model)? How about the Honda E (80’s style Honda)? Or the Suzuki Jimny (amost exactly the same look as the 80’s Samurai). Every G-wagon is still based on the same style of the 70’s G wagons. The Porsche 911 and Jeep Wrangler have essentially remained with the same silhouette that they started with.

Currently there may not be a demand for such product. Notably Volkswagen brought out an upxed version of the Beetle, Chrysler had a retro panel van, Ford brought out a car based on the early 1950 Thunderbirds. If these had really caught on and were in high demand, we would be seeing a lot more retro models.

styles change, and new cars are meant to appeal to the masses. vintage designs appeal to a small audience, so to create an assembly line for one specific vintage is just impractical as it would make the cost beyond what many would pay or above the cost of the actual vintage in question.

It depends on the car. The most expensive new car I’ve ever bought was around $35,000.
In response to a previous answer to this question, I have to state that the success or failure of previous attempts at styling have been a mixed bag. For example, there are a lot of PT Cruisers still on the road and Chrysler sold thousands of them. Although they look sort of dorky to me, I would not call the PT Cruiser a failure in terms of sales. And I certainly would not call them unreliable.
The Camaro, Mustang, and Challenger all still command high prices on the used car lots regardless of what engine they have in them. I’ve owned one of each and I remember what I paid for them. The resale prices have always been high on these cars and with the chip shortage the new ones will be commanding even higher prices.
The big problem with retro styled cars is that they look good for a few years and then people get bored with them. When the PT Cruiser came out, customers were paying well over MSRP for them. Then supply caught up with demand and they became a not-so-hot commodity. Other than widening wheel wells and putting huge engines in them, Challengers haven’t changed much in 12 years. The Mustang and Camaro have both been restyled a few tines since 2005 (Mustang) and 2010 (Camaro), and demand has gone down but I see them losing their appeal in a few years.
Overall though, I think the trend toward retro styling is going away in favor of new power plants. Ford and Chevrolet are both selling electric vehicles and Stellantis will do the same with Chrysler soon. Bottom line is that rehashing old styling cues started a fad that was either well received or ignored, depending on your point of view. But make no mistake…the fad is dying.

Not sure how vintage you mean. I'm a fan of the 1970's 1980's models. With that being said, I give Chrysler credit for still making a few models from the past as well as new models that are FULL size. I would be very willing to pay a bit more then the average price of today's luxury vehicle for a vehicleof the past that has been upgraded with today's technology.
I don't think anything older would work since the extreme weight and bulkynes of the 1940's and 1950's can not be reproduced the same way. But with meeting half way from the 70's and 80's can be done!!! There are plenty of models that in deed can be brought back. Case in point, if they can make 7,000lb Full size SUV'S, then they can make bigger cars. I simply don't understand since people are buying more SUV'S of both sizes over cars. They have the technology, so what's the problem?

They’ve tried that already and it didn’t work out like it should have. The best example was the Plymouth Prowler, the fail point with this car was the weak engine they stuck in it, no hotrod is complete without a V8! And since there was no V8 and the horsepower was low the car didn’t sell well, however it does do well on resale.
Another huge failure was the Chrysler PT Cruiser, they simply made too many of these things and they weren’t reliable on top of it, so the used value crashed into the basement.
Ford try to resurrect the late 50’s T-Bird look and instead put a weak engine into it and didn’t sell well.
Chevy Camaro has had so many issues it has fallen out of favor with buyers so I don’t think we’ll see a any vintage value in that car.
There are other cars too, but those are the main vintage inspired cars. How much would I pay for one? All the plastic and electronics they use today the car won’t be a keeper for 50 plus years.

These cost up to $20 Grand, and you still have to add everything else like glass, engine, interior, suspension, front fenders, hood, etc. etc. All of these things are available as reproductions or upgrades, down to the last nut and bolt, so you can build a “brand new” 1965 Mustang fastback, or “restomod" with modern brakes, suspension, electronics and engine which is much more reliable and driveable.
