This opinion always seems to get downvoted for reasons I don't really understand, but I'll try again.
If you are vegan, with health or sustainability as any part of your motivation, you need to primarily eat fresh fruit and vegetables. Preferably locally grown and seasonal.
Yes, you will need a bit of care to ensure you aren't missing out on essential nutrients, and sure you might want to eat less healthy/sustainable stuff part of the time for variety.
But living off highly processed gunk is never good, and the fact that it might be vegan in origin doesn't really make it a whole lot better.
For as long as I can remember there has been a constant stream of exciting new processed foods that claim all sorts of benefits but ultimately mainly help manufacturers by allowing them to hide poor quality ingredients in products that have unreasonably long shelf lives. They always, eventually, turn out to be less healthy than we were told.

You're probably getting downvoted because your argument is a strawman. The existence of vegan alternatives which mimic fish are not incompatible with a diet based mainly on healthy, whole foods.
Almost everybody, especially non-vegans, should be eating more fruit and veg, nobody's saying otherwise. But having things which while not strictly speaking healthy are still enjoyed as a treat isn't a bad thing.
I also disagree that people are holding up these vegan meat alternatives as healthy just because they're vegan. Processed food in general is worse than less processed food, I've never seen someone seriously argue otherwise. Now, processed vegan alternatives might be better than processed animal-based options, but they're both not great so it seems like a bit of a silly hill to die on in my opinion.

If someone has gone vegan they have obviously put more thought into their diet than the average person, so no one is living of this stuff. It's one option when you're stuck in some town and you didn't bring food, and all the better options are closed.

You might not realise that many, many people are vegan primarily because they believe eating animal products is unethical and unnecessary. The environmental and health benefits are also good reasons, but not everyone that goes vegan does it for the planet or their own health.
I'm not sure I've ever seen anyway argue that processed food is better than fresh, vegan or not? Processed plant based food shouldn't make up a large part of your diet. However, the more options out there for people to choose then the more likely people are to choose them over animal products, so that's always a good thing in my opinion.

So more "sustainable food" that has to be shipped in from overseas in vast quantities because we can't grow it in our country?
Jackfruit, almonds, avocados, and tapioca cannot be grown commercially in this country and as a result need to be processed abroad including canning and preserving before being flown or shipped to the UK - the amount of food miles involved is huge, and that's before we start to look at the deforestation for avocados and diverting water supplies for almonds grown for their juice.
Locally grown, sustainable food is the way forward - support your local butchers and greengrocers if you're in a city, support your local farmers if you're close enough to them, and we can put this whole "eating meat is shameful" nonsense (usually based on stats from the US intensive farming programs rather than UK standards) to bed and just be excellent to each other.

Big difference between 'flown or shipped'. Food miles isn't the biggest issue though, rather it's the emissions involved in production. The food miles of say, a piece of beef, will only account for a fraction of its enormous carbon footprint.

You don’t have to eat any processed foods to be a vegan or vegetarian. I eat vegetarian and I rarely buy any ready-made or pre-packaged stuff beyond maybe a pizza or something every now and again.

Veganism as a moral philosophy has nothing to do with health though, I have plenty of friends who eat as unhealthily as vegans as they did as omnivores. One doesn't have to be healthy to be against animal abuse, the two aren't remotely mutually exclusive but the media's turned it into a bogyman against plant-based diets.

I am not against vegan food on principle. I am very much against ultra processed food however and those fake meat burgers have a load of dodgy ingredients and are also high in carbs.
