Chinese food is probably the most transformed cuisine in the USA that I can think of. The food in China is almost nothing like Chinese food in America.
For example, Korean food in the USA is very similar to the food in Korea.
However, the food in China was far, far different from American Chinese food.
I love American Chinese food. There is almost nothing so satisfying as a hearty plate of deep fried sweet n’ sour chicken over fried rice with an egg roll on the side. However, I didn’t see anything that resembled this in my travels through China.
In China, the food was much spicier and sour and had far more vegetables. Fried rice was rare, and egg rolls and fortune cookies non-existent.
Noodle soups were very popular, as were hand-pulled noodles. I’ve never seen this kind of Chinese cuisine in the USA.
Also, chicken, beef and pork meats are popular in American Chinese food, but in China I was able to eat things like pigeon, octopus, lamb and even shark. The Chinese have a great talent for taking the things we don’t eat in the USA and making them delicious.

Seriously, chicken feet are awesome.
Overall, I think China has the best food in the world. It’s healthy, diverse and delicious. You can eat out three times a day and never try the same food. Forget pizza and hamburgers; try duck neck and lamb stomach!

I like Chinese food, especially the Cantonese and Teochew styles of Chinese food because they are healthier and less oily compared to the other styles of Chinese food, although I like Teochew food a bit more than Cantonese food because Cantonese food could be rather fattening and oily sometimes. A lot of my favourite Chinese dishes are based on Cantonese and Teochew models.
The other styles of Chinese food are also good, there are lots of great dishes could be found within the other styles of Chinese food. But I find Northeastern Chinese food to be kind of lackluster compared to the other styles of Chinese food.
Howevere there are two issues that I have with the Chinese food in China:
1.Poor food safety: Many of the food ingredients in China are either tainted with chemical substances or pollutants.
2.Poor sanitary: The food in China isn't handled cleanly, the Chinese from China unfortunately don't really have good hygiene practices and many of the food ingredients are not clean enough.

When I was in college, I had a British foreign teacher, a tall man, a pale face, and a big black umbrella on a sunny day. Suddenly one day, we mentioned a food he had eaten on the side of the road. He said: It is the best French salted bread I have ever eaten. It is authentic than any one I have ever eaten in France. The crispy skin, the soft inner lining, the rich onion scent, and even more powerful is ! It is baked in a very traditional stove! ! ! There was a wave on his face that had never been seen before, and his head was closed with his eyes closed. The intoxicating feeling shocked everyone. Big Brother, is that a baking cake? Biscuits. . . The cheapest five cents on the street, two pieces of simple baked sesame cakes modified with petrol cans.

I love them, not only food from China but also those cooked by Chinese diaspora across the globe as well.
I just went back from trip to Kota Kinabalu in East Malaysia (know to be home to one of the biggest oversea Chinese community in Malaysia). My original intent was to just try out their colourful variants of jungle durian but I have completely fallen in love with the Chinese food offer by even the most humble eateries.

From the lowly chicken noodle to the mighty pork stew and the glorious porridge, nearly every Chinese menu served in the local style of Malaysia never failed to impress me. It was rich in style, well balance, and most important of all very tasty.
One thing that’s very charming about Chinese food is that it has so much varieties, from different region in China to different countries where Chinese diaspora had settled. It is definitely one of my top go to food in Northeast and Southeast Asia.
…. but then again, it would be nice if they could cut down a bit on oil and msg…

As with any cuisine it’s hard to generalize if it is tasty or not.

But as far as I can say I really enjoyed the majority of dishes I was served (which were a lot in 6 months) in China and Taiwan. I fell in love with 小籠包 soup dumplings in Taipei- one single bite of happiness.

Some local dishes were really strange to me though i.e. the century egg or grilled chicken hearts.

What do the Chinese think of Western food?
I'm an ABC (American Born Chinese) with parents from the mainland. Here are some observations from my parents, relatives, and Chinese friends:
·Americans like to eat a lot of fried, greasy foods (e.g. fried chicken, pizza, and burgers). These foods are good occasionally but usually avoided for health reasons.

·The Chinese have a concept called “热气” (loosely translated to “internal heat”). Having a lot of internal heat is bad. Fried, greasy foods promote internal heat = no bueno.

·Americans like to drink a lot of soda and other sugary beverages. Again, good in moderation but generally a no-no.
·Processed food and fast food weren't a thing in my family. My mom always insisted on fresh ingredients and home-cooked meals even though I coveted Lunchables and McDonald’s. Not sure why, but probably for health reasons.

Overall, American/Western food is considered excessive compared to Chinese food: excessively sweet, excessively greasy/fattening, and excessively salty.
American food is great as an occasional treat but definitely not for everyday consumption. Tasty in small quantities, overwhelming in large amounts.
EDIT: Some people have commented that the answer is asking about “Western” food and not American food. I realize that American food is a subset of Western food. I focus on American food because for most Chinese people I know, the bulk of their experience with Western food is through American food.
EDIT 2: Wow I didn't expect for this answer to get so much attention. Just wanted to clarify a few things after reading comments!
China is a huge country, and this post and my comments on it do not and cannot represent the whole country and all of its people. I'm writing primarily from my experiences and conversations with family from the Guangdong region in China.

I also realize that this post sounds overwhelmingly negative towards American food. I know most Americans don't eat like this and the US is also a huge country with a diverse population and palette. But this is the perception of American food held by the Chinese people I know. They've experienced American food through fast food, some American restaurant chains, and what's shown in the media. That's what they consider American food and this post is a reflection of their opinions on it.

Because people who regard Chinese food as “cheaper” or “lower end” have a limited knowledge of the real extent of Chinese food.
Most of them think “Chinese food” is Panda Express, PF Chang’s, or any number of restaurants where you eat fried rice with sweet and sour chicken, orange chicken, or some such gloopy-sauce concoction, (in some places, with CHIPS, of all things, [Chips = thick fries]) and all that for $6 per person, sometimes even less.
This is akin to saying that Italian food is New York pizza, “Creamy Carbonara”, and what you find at Olive Garden.
Anyone familiar with authentic Chinese food knows that Chinese cuisine can be just as expensive as any cuisine out there.

Chinese restaurants that serve authentic Chinese food and whose main clientele are Chinese, other Asians, or anyone who is familiar with authentic Chinese food, will be able to charge higher prices because those customers know (and expect) that certain dishes will be more expensive than others.
This becomes very apparent, when, for example, you want to have a Chinese wedding dinner and the restaurant offers you several different ten-course dinners to feed your guests, each one at a markedly different price point. (you choose the one that best fits your budget)
For example, Steamed Fish can easily cost you an arm and a leg (and maybe a fraction of your soul) depending on which kind of fish you go for. There’s definitely a hierarchy when it comes to which type of fish costs more.

You know what, I actually really like Orange Chicken!
But pushing that aside, Americans actually managed to make Chinese food incredibly unhealthy.
Be it, orange chicken, caramel chicken, General Tso’s chicken or black bean with crispy beef. All of these are heavily dunked in batter, deep-fried in oil and glazed with disgustingly sweet syrup. Plus, they all taste the same.
Perhaps this is why American Chinese chow mein and fried rice are so under-seasoned, as the extra flavour might just sky-rocket their blood-pressure. Did I say underseasoned? Yep, they are. Chinese fried rice and chow mein (which actually just means ‘fried noodles’) are supposed to be flavourful, fragrant and amazing on its own. Instead, chinese takeouts in America serve sticky overcooked rice with undercooked chunks of scrambled eggs. A Chinese person would call this absolute ‘daylight robbery’.

In my opinion, chinese food in America are missing out on so much more of Chinese cuisine as most restaurant owners prefer to save money. In order to cut expenses, Chinese restaurants in America use poor-quality soy sauce, less salt, less vegetables and more cheap stuff like cornstarch, oil and MSG to make the food slightly edible. What’s more, they like to ‘recycle’ the ingredients to save more buck and reduce waste, which is why almost 70% of the menu contain almost the same ingredients (bamboo shoots, egg, wood-ear mushrooms, sesame seeds, cabbage).
Can it be improved? Definitely! But Americans actually like these type of flavours and we can’t blame them. Just don’t force a Chinese person to try it.

I had the opportunity of studying abroad in China for 6 months, and needless to say that after the experience, my taste for Chinese food will never be satisfied with what is served, Chinese dish wise, here in the United States.
Let me elaborate. For the longest time, my "experience" in consuming Chinese food consisted of greasy Chinese buffets, Panda Express, and instant noodle. I was worried, going into China, that staple foods such as rice and noodle were going to be bland just like their American counterparts.
Boy was I wrong.

There's limitless positivities to say about the experience that comes with eating Chinese cuisine. Never before had I had the opportunity to:
·Eat Chinese food family style.
·Explore different ethnicities of Chinese cuisine, ie. Sichuan.
·Try an endless variety of Chinese dumplings, i.e.. Xiaolongbao.
·Eat with unique Chinese utensils outside of chopsticks.
·Consume street cuisine that can be qualifiable as both filling and delicious. (In elaboration, street food in America is either one or the other)
·Try a plethora of asian cuisines, cooked and served equivalently to their respective styles, outside of China, ie. Korean Barbecue, Teppanyaki, etc.
·Discover a liking for hot pot.
·Consume "USA taboo" foods, ie. chicken feet, octopus, etc.
In summary, Chinese cuisine further enhances the experience of living, studying, and exploring China. In my time of world travel, China's diverse offerings trump any other country's food.

There is a joke in China.
A foreigner went to China and hoped to taste various Chinese food. He thought that each province has its special dishes, for example, Cantonese cuisine, Sichuan cuisine, Hunan cuisine and so on. After he tasted all of above, he thought that there are different kinds of food in different cities. Then, he took Peking dish, Shanghai dish, etc. When he thought he had tasted all sorts of Chinese food, he found amazingly that each county has its specialties. For example, Shaxian County snacks……
Seriously, I think Chinese food has a quite big range. Because of our 56 ethnicities, we might not be similar in what kind of food we gonna to enjoy. Because of the latitude of our country varying from 3°51′N to 53°33′N, we always live under different weather and the environment require us to eat different kinds of food.
So it is not easy to make a comment on Chinese food.
But finally, I have to say that Guangzhou really is a place created for foodies. As long as you are willing to spend time to find the deliciousness, you will have a satisfying trip~

Chinese food, oh, Chinese food.
Before I start, I will have to say it is way, waaaay different in China than in the Western world. Yes, there are some similarities, but anyway who has been to China, including me, would tell you that it is different.
This being said, it is one of the best foods I have tried and at the same time there are things that are really so disgusting. Take smelly tofu, for example. I mean - just standing 10 metres away from it outside on the street was unbearable. I didn’t have the guts to try it.
On the other hand, Beijing duck’s succulent skin, dipped in sweet sauce, and the duck’s absolutely scrumptious fillet seasoned with some soy sauce make all your senses cheerfully celebrate.

I believe it is a food which is quite healthy since it only takes like a couple of minutes to fry the food (yes, it is fried but it is stir-fried not deep-fried) which preserves many of the vitamins and nutrients. Plus, you can have a fresh meal every single day and for every meal. Steamed rice is also a must and is a staple food in China (and elsewhere in Eastern China, I guess).
As any other cuisine, it has its delicious and not-so-delicious meals, but, in general, it is really tasty and hearty.
Just watch out because the Chinese use “ganbei” for “cheers” which literally means “bottoms-up” so they will drink anything, including red wine, like that.

Nothing is new, history repeats itself, Henry Ford revolutionized the car industry by assembly line operations, Chinese have done the same thing, by delivering fast and at the reasonable price as Henry Ford did with the cars. So much so, I have done the time study and costing, eating Chinese food at a restaurant is far cheaper to cook at home once you factor in buying ingredients, energy costs, cooking and cleaning time.
