It's not like what you think. Forks and knives just give a bad impression in Chinese culture because everyone thinks they are dangerous. The Chinese believe that the handling of food should be left to the chef in the kitchen. When the food is presented to the people, it should be properly handled and easy to eat. Therefore, the Chinese can use chopsticks to eat any food except liquids.
But that doesn't mean that the Chinese will think that you are acting uncivilized by using a knife and fork. Because in your culture, knives and forks are cutlery and should be at the table. Why would you bring a weapon to a social dining event. I get if you're camping and want to experience pre-modern life with modern camping equipment.
But in a modern facility with a kitchen the butchering should be done in the kitchen.
Weapons should be left outside of social gatherings.

I've read in ancient time, to prevent assassination attemp of the emperor, therefore knives and forks were banned on dining table. I don't know if that was when they started using wooden chopstick. Sure you can use chopstick to stab but chopstick tip was more blunt so making it harder to cause damage. Or they can use their hand but that was deemed uncivilized.
