I have talked to many Chinese people about this issue
Summarize their views
1. Knives and forks are primitive tableware that was abandoned by the Chinese.
2. Knives and forks are dangerous and offensive and should not appear on the dining table.
3. The appearance of knives and forks on the dining table is a symbol of barbarians.
4. Using knives and forks represents that a civilization’s way of handling food has not yet completed evolution (diners need to handle it themselves)
5. Using knives and forks makes eating very inefficient, which represents primitiveness and backwardness.

My experience: When traveling to China, you can freely use knives and forks without any problems. In fact, most young Chinese people can skillfully use a knife and fork to cut steak and pizza.
Even if you take out your own knife and fork at a Chinese dinner party, the Chinese will tolerate you completely.
(I even think that what they are thinking in their hearts is actually sympathy)
However, if you wish to state in front of Chinese people that knives and forks have some cultural superiority. You will definitely be treated like an idiot.

In East Asia, only ethnic minorities such as Tibetans and Mongols (traditionally considered barbarians) use knives to eat meat. So in the traditional stereotype of East Asia, only barbarians use knives as tableware (although these concepts have now changed). The food that uses knives and forks as tableware is large and needs to be divided, and the cooking process is relatively simple. Chinese cuisine, whether it's vegetables or meat, is divided into small pieces by chefs, saving diners the time to divide their own food.

So you should know that this is a traditional stereotype and should only be used to counter racist speech, right?
Otherwise, I would be very skeptical about how you ate this with chopsticks.

So you’re saying in order to become advanced, you have to adopt chopsticks? Knives and forks are more useful and efficient than sticks in my opinion. We have access to them, but we choose to remain using our own utensils. It’s racist to say that people are primitive or barbarians because of their utensils.

It's not like what you think. Forks and knives just give a bad impression in Chinese culture because everyone thinks they are dangerous. The Chinese believe that the handling of food should be left to the chef in the kitchen. When the food is presented to the people, it should be properly handled and easy to eat. Therefore, the Chinese can use chopsticks to eat any food except liquids.
But that doesn't mean that the Chinese will think that you are acting uncivilized by using a knife and fork. Because in your culture, knives and forks are cutlery and should be at the table. The answerer is describing the way Chinese people think about knives and forks in their own culture. I don't think it's racist for them to express how they view forks and knives in their own culture.

By the way, the reason that some Chinese think that knives and forks are backward and abandoned cutlery is because the Chinese people used knives and forks as cutlery as early as 5,000 years ago.
Knives and forks unearthed at Zongri site. Made of bone.
This site, according to carbon 14 dating, extends from 5600 years ago to about 4000 years ago. Knife and fork cutlery was also found at the site of the Shang Dynasty. In the course of later development, knives and forks were gradually replaced by chopsticks.

hahaha, you think this is racist? then your arguments support the fact that the West is extremely racist since the Chinese are told to abandon their culture all the time. Even commercial advertisements from Western brands sometimes publicly express this opinion, and when Chinese consumers show their discontent, western media usually call them riots and nationalist netizens. 6+ years of living in the US and Europe told me this.

With respect to chopsticks, some Chinese do think chopsticks are superior to knives and forks not because they are from the West, but because the Chinese once used them like 3000 years ago and decided to not use them because back then the most civilized Chinese society used chopsticks and uneducated and barbarians use forks and knives, so gradually people started to use chopsticks, this trend generally spread through China, Korea, Japan, Vietnam.

Why would you bring a weapon to a social dining event. I get if you're camping and want to experience pre-modern life with modern camping equipment.
But in a modern facility with a kitchen the butchering should be done in the kitchen.
Weapons should be left outside of social gatherings.

This a T-bone steak at a banquet style Cantonese Chinese restaurant.
Pre-cut to Chopstick sized portions in the kitchen.
The steak is plated in fashion appealing to the eyes as well
Those not wanting to double dip their chopsticks into common food are provided a serving spoon.
Basically it's a cultural thing about butchering and bring weapons to the table at a social gathering.

Chopsticks can be used to harm/kill persons as well.

a) you got yourself into an argument by joining in the commentary
b) it’s not that a knife/fork is a weapon or not, it’s that in a certain period of a certain culture, to many people it was seen as/symbolized a weapon to them, therefore it was typical to exclude these utensils at the dinner table.
You can disagree all you want, it doesn’t change the historical accuracy of the answer.

I've read in ancient time, to prevent assassination attemp of the emperor, therefore knives and forks were banned on dining table. I don't know if that was when they started using wooden chopstick. Sure you can use chopstick to stab but chopstick tip was more blunt so making it harder to cause damage. Or they can use their hand but that was deemed uncivilized.
