Thanks for the video. I enjoyed it. I tried chicken feet for the first time last year at a Chinese restaurant, and despite being Westerner, I liked the way they were prepared. The texture was great, and everything just fell off the bone. I’ve also heard from my Chinese friends that many believe the gelatin in chicken feet is good for the skin. Not sure about the science, but they’re rich in gelatin, so it could make sense. Every culture has its own food traditions no need to like everything, but it's great to keep an open mind. Actually eating chicken feet wasn't ac ommon thing in China like today, it was mostly the Cantonese featured chicken feet as a cuisine, most other regions didn't like chicken feet so much like today. Back then chicken feet were cheap, many Chinese threw them away or used them for soup stock. Now all over China there are shops that specialize in selling cooked chicken feet. Prices of chicken feet skyrocketed, more expensive than chicken meat.

There is other kind of "brown sugar", wich is basically the juice of the cane, boiled until caramelize, dried and milled. In latinamérica is called just Dulce, or Panela.

I think fish head is another food item like the chicken feet. Back in the 90's, I would go to the market in Nottingham, UK to buy fish head to cook my favourite 'fish head curry'. However, most of the fishmongers there will just give me those big salmon fish heads for free.

@ 8:20~. They are "sugar canes". They are most certainly NOT bamboos.
There are basically two kinds of sugar canes, one light greenis-yellow color like these in the video, and the other kind is with dark red skin. Sugar canes are pressed to get the juice (which contains a lot of sugar) to make sugars.

Given the huge population of the country, you would think that supermarkets in China are over crowded. Actually, most supermarkets there are like this one, or maybe a little busier than this one. The reason is that most people either order groceries online or buy their groceries at farmers market/wetmarkt. The meats and produces in farmers market are even cheaper and fresher.

Those are sugar canes, you can chew on them or they can make sugar cane juice with them, and is very delicious. Sugar comes from sugar canes in the tropical area, and from beets in the temperate area. Though the majority are from sugar canes these days.

I know you can use a spoon and a fork to eat hotpot, but what about a type of hotpot like copper-boiled sliced meat? I can understand why the evolution of cooking techniques and recipes was slow over thousands of years, as there were religious factors in the West. China is so technically advanced. I think they’re trialing the scan yourself trolleys in a couple of places in Australia. The fermented food looks amazing but they can keep their chicken feet and alligators.

Those bamboo looking things are called sugarcane. In South East Asia, we put them into a machine and it crushes the cane. The juice gets squeezed out as a Sugarcane drink. The pulp is thrown away. People used to just bite and chew the things in their mouth 20 years ago. Now most people don't really eat it like that.

you were right, we have a large percentage of the population with lactose intolerance. but it is normally developed sometime after they stop drinking milk from their mothers.

About the kimchi(we call it 腌白菜), we have had this in China for thousands of years, likely earlier than Korean. Just another thing Korean ppl claimed to be their invention.

What I miss most about China, apart from the low prices, is the extraordinary range of choice in food everywhere.
Back in the U.K., especially in the city centres, the range of fresh food on offer in supermarkets is extremely limited - with the excuse that increasing choice would increase (the already astronomical) prices. One has about six types of green vegetables to choose from, and if you want to economise and shop at Lidl, then depending on the day or the week, they may not stock broccoli or asparagus or cauliflower or courgettes : some of their very limited standard offerings - so you are reduced to simply buying whatever is on the shelves, and making do. Even the Chinese supermarkets are constantly short of stock because they “cannot get supplies”. They cite import problems.

I am a Chinese person working in the UK. I’ve noticed that in the West, there is no true "freedom of cooking." First, energy is in short supply, and people are encouraged to save energy. In many cases, open flames are not even allowed, limiting many cooking methods. Second, fresh ingredients are hard to find in supermarkets – most of the food is prepackaged. While this is convenient, the taste is noticeably off. For example, the fragrant aroma from the fat in fresh British pork is almost entirely gone, and I don’t know why this is the case. In China, we don’t need to worry about conserving electricity because we lead the world in clean energy development and tree planting efficiency. Our food is also fresher, cheaper, and comes in a far wider variety.

Thousands of years ago, we also had spoons and forks, but our ancestors quickly realized they were inadequate. For example, if I prepare a dish like sweet and sour squirrel fish, using a spoon and fork wouldn’t just be impractical but would also ruin the dish’s visual presentation.
In summary, the Western perspective on food is very conservative and, frankly, rather peculiar.

China is so technically advanced. I think they’re trialing the scan yourself trolleys in a couple of places in Australia. The fermented food looks amazing but they can keep their chicken feet and alligators .
The markets seem cheaper

Where in China was this?? I'm in Zhaoqing in Guangdong province, a smaller city. That supermarket was far ahead of anywhere we have here yet!! But I'm guessing it won't be long before we catch up, that shopping trolley was amazing!!

Raw milk is illegal to be sold in many states in the united states .. very few actually sell it ... its safe to say this store was on a expensive side or for those who have more then enough

Makes sense, most of the dairy products do seem to be marketed towards kids. Seems most of the yogurt are sweetened as well. For hard cheese, online, Ole, Sam's club, or Costco if you have one by you.

Historically, the Chinese have eaten every part of the animal, be it fish heads or chicken feet or pigs’ trotters or offal.
My assumption is that this stemmed from the recurrent and all too frequent periods of war and famine with the fall of dynasties, so people could not afford waste. With time, and the extraordinary culinary culture, what began as necessity became refinement, and the poorest cuts became the luxuries as ways were developed to make them delicious : so chicken wings cost more than chicken breast (which also tends to be more coarse and tough).

I remember as a child, my father, who was quite a gourmet, telling me that when he was young in China (in the 1920’s), you could buy fish eyes from vats and that these were particular delicacies. And he would ask the London restaurants to save the back ends of the roast ducks for him as they were the most delicious. (He would also carve and eat smoke salmon as you would a steak, and he loved sashimi and steak tartare, so it was not just fish eyes for him).

It’s sugar cane not bamboo That’s what they make sugar from. You can ask them to make sugar cane juice or you can chew it and suck the juices. Spit away the fibre after, don’t swallow.

i actually never heard about Chinese people growing to be lactose intolerant, the reason its hard to find regular hard cheese is because
A. we dont typically have ovens at home
B. we dont really use cheese in cooking because most Chinese people arent big fans of cheese.
C. the cheese is mainly for sandwiches and burgers. which again, we dont eat often, taste worse than delivery why make it yourself.

Chicken feet saved American economy in 2008. If I can remember correctly, Chinese bought 800 million worth from the USA.

About the lactose intolerance, it is kind of true. But that's not the reason for lacking hard cheese. It is more because cheese overall is not common to us, except in places like inner Mongolia, then you find diary products in their daily diet. And since it is alien and expensive, and we only catch up with the high/good quality protein diet not long ago, you find it more to kids, you know, because they are more precious in a family.

the cheese for Chinese is like tofu for westerners,Tofu is quite common. And we have different kinds for tofu like various cheese. We can eat cheese and also know it good for health. But Just not used to eating it. And most people can only accept mozzarella cheese, which is pizza cheese. Most Chinese people cannot accept the taste of other cheeses, just like you don't like stinky tofu and hairy tofu.

For humans, being able to digest lactose as adults is actually the result of a genetic mutation. Over 90% of people in East and Southeast Asia have some level of lactose intolerance. In China’s Han population, more than 92% carry the lactase non-persistence gene (called the LCT-13910 CC genotype), which basically means their lactase activity crashes after weaning. In Chinese supermarkets, you’ll find tons of low-lactose and lactose-free dairy products.

In the US the whole point is to extract as much money from you as possible. Everything else is secondary. The shopping experience demonstrates that.

Chicken wings used to be waste product from the processing plants in Canada in the early 70's, the Chinese immigrants were able to get them for free. Now they are the priciest part of the chicken!

I immigrated to the US almost 30 years ago from China. Very little has changed in the US, like time freezes: Same buildings, same roads, same supermarkets..... Every time I went back to China, there were something new. Frankly, comparing with China, USA is WAY behind in many aspects. That's the result of sleeping on old glories, not doing anything to improve citizen's lives.

Looks more like a hypermart in downtown, rather than neighbourhood supermarkets. but still impressive with selfservice checkouts. And it will not work in the USA, because of the labour unxs. The US will/can not progress, not because they cannot afford the technology, but because of many policies are hampered by unxs and lobbist. and also the all those crimes.

On the Russia chicken feet story. This is my biggest issue with Russia, a country I otherwise love...a locked-in mentality. Russia needs to diversify its immigration human imports in order to refresh thinking. Importing Evangelical Farmers from Australia, North America and South Africa (White people with die-hard reactionary Christian beliefs) is not going to help get to 2080 it will more likely get things back to 1880.
