In the year 1952, the defeated Chinese government in Taiwan received the visit of the commander of the US 7th fleet. The official chef Peng Changgui, who’s also from Hunan, General Tso’s province, invented this dish for the welcome dinner and called it General Tso’s chicken.Now we don’t know if he made it sweet and sour to cater to the American, or the Zhejiang leadership of the Chinese government at the time, or he simply couldn’t get his hands on good chili as Taiwanese didn’t eat spicy, or maybe that he just chose the name in honor of the hero who fought back Russian backed rebellion, which was how the Chinese government in Taiwan and Peng himself must have viewed the new communist government in Beijing.

One we visited was the size of a grocery store inside. Very large. The table we were taken to was one of 4 that had non-Asians. It was a buffet, so you could see all the available dishes, unlike a menu restaurant where you would be a little less fully-aware of all dishes.

(NOTE: I have worked for one of those "regular people Chines food stores" in Mississauga, for a few months as driver. Fried chicken claws were definitely not on the menu).
The reason I remember the chicken claws dish is that, the table next to ours, which had two "white-guys", early twenties, in golf shirts, havin' a good 'ol time, were playing Dancing Feet with the chicken claws on the edge of their plates, having taken some from the buffet, but not intending to actually eat them.

Just based on the contrast between the food I've seen in Asian restaurants with almost exclusively Asian customers... and Asian restaurants selling "Chinese Food"... I think it safe to say that "Consumer-centric" menus are definitely a thing.

We went to a Chinese wedding quite a long time ago and the restaurant had about two thousand people in it. We walked past banquet after banquet room on the way to OUR banquet of around 500. Traditional Chinese Wedding menu, chosen by Chinese people, cooked by Chinese people. In fact, I have been to three such weddings and again, that's good enough for me.

I have visited China twice, once in 2007 and again in 2017. Both trips were for about a week and a half, involved time in Shanghai and Beijing, and were pretty much for tourist purposes. I don't pretend that this makes me some kind of expert on anything related to China, but it's still more direct exposure to the country that most Americans (and probably most Westerners) have. And I will note that I'm pretty adventurous when it comes to food, especially in more exotic locales — I wasn't just looking for really safe food options on these trips.

If anyone tries to tell you that the kind of food you see at a U.S. Chinese restaurant doesn't exist in China, that it is just made up for Americans or something, then that is not correct.

The big difference is that there is a lot more than just that stuff in China. China is about the same size as the U.S. in geographic terms, and it has similar geographic diversity, meaning there is a wide range of things that grow well to influence a wide range of local cuisines. China, like the U.S., also has plenty of ethnic diversity, which influences a lot of local cuisines. And here is a big simplification, but China is similar to the U.S. in having one historically dominant ethnic group that has been happy to marginalize ethnic minorities while still appropriating all their good food. Probably the best meal I had in China was billed as Turkic food, basically the cuisine of xinjiang.

Consider the inverse situation. What might pass for "American food" at a restaurant in the Eastern Hemisphere? Hamburgers and hot dogs? Just straight-up McDonalds? Whatever it is, it will be stuff that you could get in the U.S. if you wanted it, but that doesn't mean that the U.S. doesn't have all kinds of other food, or that Americans only eat McDonalds all day.

In any kind of situation like this, you are going to have some variability based on what ingredients are available. A Chinese chef might be using certain spices that are just really hard to source in the U.S., so a chef in the U.S. trying to follow the exact same recipe may have to make some improvisations to try to get close enough. Is that "authentic?" I would say it probably is, even if you aren't going to end up with the exact same thing.

it isn't the same, but i wouldn't say it is less authentic. Many of the dishes in Chinese restaurants in america were created by Chinese immigrants. The reason they are not the same is because the immigrants didn't have access to all the ingredients they would have had back home, so they used what was locally available that was close enough to make approximations of their traditional foods, one because it was what they knew how to cook and two because it was a reminder of home.

people really like to shit on americanized Chinese food forgetting that the people that originally started making many of those dishes were from china and that they came to be because of poverty and what was available at a time when global trade of fresh produce was not easy and very expensive.
