If you want to explore more diverse Chinese villages, I strongly recommend Yunnan province to you.
As a native form northern China, Yunnan is just like a wonderland for me. The natural scenery there is very beautiful, you can see snow mountains and highland and lakes. Originally, my village had more than 200 people, but now only a dozen elderly people who did not move far have stayed in the countryside, while others have gone to the city. donkey and rabbit are meat resources in China, people do eat them, donkey taste like beef but some difference in texture, rabbit feels like chicken but with unique flavour, best donkey food are in Hebei province and best rabbits are in Sichuan and Chongqing
fun story, last time I have donkey meat is actually in a Chinese restraunt in Toronto, they serve hebei style donkey sandwich. And I really like rabbit meat, its one of my favourite meat, every time I go to Chengdu I buy a lot, its very hard to make good rabbit dish and people there really good at it
btw every time I watch some western people eat in China and they have fish on menu I worry so much, because in China all fish in dish contains fish bone, its very different from western world, and it can be extremely dangerous if people dont know it, also some common fish species people eat in China have lots of small bones that easy to get people choke, so just be very careful when you eat any food contains fish in China :)

另外，每次我看到一些西方人在中国吃饭，他们的菜单上有鱼，我就非常担心，因为在中国，所有菜里的鱼都含有鱼骨，这和西方世界很不一样，如果人们不知道，就会非常危险，而且中国人常吃的一些鱼种有很多小骨头，很容易让人噎着，所以在中国吃任何含有鱼的食物时都要非常小心:)

You just missed the most delicious meat on earth. In the local saying, the most delicious meat in heaven is dragon, the most delicious meat on earth is donkey. I grew up in northern China not far from xian, the donkey meat and the soup was my favorite.
