The trouble (or, well “trouble”) with this is that what most Americans consider “Chinese food” is not actual food that people eat in China. It’s American-Chinese food.

“Lo Mein,” for instance, is a very well known “Chinese food” that is not actually Chinese. It was invented by a Chinese immigrant to the US. So it’s got Chinese inspiration behind it, but it’s not an actual made-in-China-Chinese food. Just like “California rolls” are indeed a kind of sushi, but they were invented in the US.

At the buffet, the food isn't authentic Chinese. It's been Americanized. You have egg rolls, beef and broccoli, cabbage bathing in butter, potatoes soaked in butter, chicken dishes with different flavors, sweet and sour pork, lo mein noodles, egg drop soup, sweet and sour soup, and fortune cookies.

I went with 50 adult Americans on a three week trip to China. The first night at our welcome banquet, 99% of the Americans started to complain. Our hosts had prepared a delicious feast. But many Americans asked each other why the food didn't look like the Chinese buffet in our Kentucky town.

Over the next few days, the complaining began to make its way back to our hosts. They started to take us only to American-style Chinese places in Beijing when we went on field trips. I wasn't happy with this new arrangement.

For our third and final week in China, we stayed on the Baoding campus of our hosts. Every morning they prepared amazing Chinese breakfasts for us, but most of them wouldn't eat baozi and congee. They wouldn't even try it. Finally, our Chinese hosts had to tell us they were throwing away most of breakfast and that they were going to reduce what they cooked.

I will say that the Americans liked a few things while in China. They loved Hot Pot, Beijing Duck, and this Muslim meat place with different types of meat on a stick. They also loved going to McDonald's, eating Chinese American food in China, and Chinese popsicles. And I can't forget drinking bottled water and beer.

It was also ironic how so many of them came back and gave presentations about their wonderful time in China. They claimed to be Chinese experts with a deep love for their Chinese experience.

But I want to end with something positive. I finally figured out that they liked food that appeared familiar. They didn't like guessing about their food. On one of our field trips we stopped at a place that claimed to make American food. My group rushed into the place and began to eat everything in sight. For the next 3–4 days, most of them came down with food poisoning. I did too. But I was still overjoyed that karma bit them in the ass. Positive indeed!

Note: I made sure to eat in the cafeteria on our campuses. I also snuck to Beijing to eat from the suburbs. Whenever possible, I purchased food from street vendors. I quickly got over some of the Americans funny faces over what I ate in China. I didn't go to China to have a watered down experience.

I know that many of my non-Chinese friends love eating some Chinese dishes. Stuff like steamed buns, Chinese barbeque, hotpot, fried rice, ect. Most cuisines have some food that is palpable to the westernized tastes.

The same goes for Americanized Chinese dishes. Those dishes tend to be much sweeter and richer than actual Chinese food, and are very heavily influenced by American cooking.

Some of the more obscure (or weird) Chinese foods are less well-liked. I know that those little fruit jellies weren’t terribly popular with my friends, and a lot of Chinese candy wasn’t to their liking; too bland, not sweet enough, etc. Those were surprising to me.

Less surprising were century eggs, preserved vegetables, xifan/zhou (congee), stinky tofu… most people I know are less enthusiastic about those.

We like it. Chinese restaurants are quite popular here, and are often a good bargain. As others have mentioned, many of the menu items have been “Americanized” but I enjoy both the Americanized versions and some of the more authentic foods I’ve tried.

I live in Cleveland, Ohio, USA which has a decent sized “Asia Town” featuring many excellent restaurants and grocery stores. You can find more authentic dishes at many of these places, particularly if you bring a Chinese friend with you and let him or her place the order. He or she will probably still avoid any items that they think you might dislike, but you’ll get to try some things you might not have thought of ordering. I’m particularly fond of Dim Sum which we can get at two places in town.

I also like going to the Asian grocery. They have great prices and variety for staples such as rice and tea as well as an incredible array of sauces and produce. This is the only place I’ve been where I can get fresh water chestnuts (much sweeter than canned.) I also get dried shrimp paste there, which I use to make Indonesian fried rice.

I also had some really excellent meals in Hong Kong on a trip some years back. One morning we went out for Dim Sum, and I have no idea what I ate, though it was tasty. But I also know that that meal was curated. When one goes out for Dim Sum, they bring carts around with various items and you point out the ones you wish to try. There were a few items that I pointed to that the waitress wouldn’t give me. She shook her head and said I wouldn’t like them. I don’t know if I would have liked them or not, but we enjoyed the things we did get.
