As a westerner in China, I struggled with the huge contrast between the food in China and the "Chinese" food we got back home.

Chinese food outside China is made to taste diffeferent from western food but still appeal to the western mind. it is rarely the same thing as real Chinese food.

For example, there was an instance of a white British couple traveled to Vietnam and created a chain upon their return to UK. They trademarked the word “pho” in the UK back in the 2000s. Later, they proceeded to challenge and threatened smaller Vietnamese owned restaurants using “pho” in their names. There have been similar cases of this in the US as well and not just Vietnamese cuisine.

Nearly all Chinese food in the west is specific to Guangdong. The early Chinese migrants were almost exclusively from this region in China due to a bloody civil war in the south. This is slowly changing with new migrants from Sichuan, Dongbei, etc. Foreigners are being introduced to hot pot, peking duck, bbq skewers, Shaanxi burgers, etc. The chefs are usually from China so the food is authentic. Just ignore Panda Express.

It seems that at least here in the us, Hunan was a huge influence. Hunan was a huge influence via tiawan-hawaii-america with orange chicken being based on Tangarine chicken. Sesame apparently having heavy ties to sweet and sour pork. And the final in the famous chicken trinity is General tsos was also based on hunan flavors. Taiwanese influence was also huge, and by extension fujian influence.

Orange chicken is more like a fusion dish created in Hawaii. They tried to sell it in Hunan but it flopped. The locals found it way too sweet.

I have run into people on this site who insist these types of dishes (orange chicken, general tsos for example) are Chinese. I tried to correct them and say no, they are perfectly fine American-Chinese dishes but are not actually from China or eaten in China...... A lot of Hunanese food is absolutely covered in chillies, and I can't really think of any dishes in American Chinese food that are similar to that. The only thing I can think of flavourwise that's similar to American Chinese food is 红烧肉, and even that is quite different texturally.

Vancouver is pretty damn good. It's all the HKers, but there's a decent mainland population too. I think their ingredients are really good too. The sushi there is excellent and cheap.

Vancouver has I think North America’s oldest Chinatown. It has a rich history of Taishanese and Cantonese residents. It is probably one of the starting places trying to make Chinese compatible with local tastes and a very long history. It makes sense it taste the best to you since you are from that area.

It's not just that there's a long history of immigration, it's that there's an ONGOING history of immigration. There are a TON of Chinese people living in Vancouver. Some neighbourhoods are 49% Chinese, making them the actual majority. It's not uncommon to see signs written only in Chinese. There are families that have been here for hundreds of years and families that just got off a plane last week. The majority used to be Cantonese speaking but I think Mandarin speakers have officially surpassed them in the census.

My cousin and I were just talking about that yesterday. I was in Vancouver 2 years ago. Had dimsum twice. Some of the best dimsum I’ve had in North America…arguably better than Hong Kong like you said.

Yes, we enjoy trying Chinese food from different parts of the world. I have had American, Kosher, Halal, Mexican, French, Italian, English, Indian, Korean, Japanese, Malaysian, Australian, New Zealand, Indonesian-Chinese food to try the local flair. I love Mexican and Indonesian Chinese the best. The dishes are very fresh and colorful with unique flavors. As for the best Chinese food I have tried, it has to be between Tainan, Guohua street and Singapore’s hawkers centres edging out the win. There is so much variety that it is a tough choice.

It seems like the chives take out were familiar with in the US is more "inspired" by Chinese food, but tailored more to American tastes and uses ingredients that are more common here.

I would describe it as food with Chinese characteristics. I like it, but I also don't view it as Chinese food. It's only natural for food to evolve and change and accommodate new pallets and ingredients and in this process it becomes something new and distinctly different.

I went to Groningen, Netherlands 10 years ago, and the "Chinese Food" there is horrible. Most of Chinese students learn how to cook themselves.

I live in Vancouver now. Chinese food is closer to what we expect back in China. Some Cantonese restaurants are even considered better because they have experienced chefs with traditional cooking skills. Toronto has more and better Non-Cantonese Chinese restaurants.

What they call "Chinese food" in the Netherlands is more like Dutchified Indonesian food. Very little connection to actual Chinese food unfortunatly.

The American Chinese food is one cuisine to itself, continuously evolving. It is mostly Yue or Guangdong/Toisan/Hong Kong cuisine americanized. It is now mostly Hokchew people opening the shops and adding Min or Hokchew dishes on top of it.

Food fusion is not a bad thing. Most food today is a result of combining other nation's food / ingredients , with the adaptation of local tastes. As long as a new creation of food can survive in a local market, then it is not that bad.

They are different cuisines. Can be delicious, but basically not the same food. Most American Chinese food doesn’t really exist in China, some have been reverse imported to China lol. Also, there’s not really a singular cuisine that’s “Chinese food” within China. Other than maybe imperial banquet cooking? And maybe some home cooking dishes not often seen in restaurants like tomato eggs. There are at least 8 major cuisines within China and over 20 regional styles. So Irish Chinese, American Chinese, Cuban Chinese have evolved into their own thing over time. A Kinda like TexMex and CaliMex are their own thing that’s not the same as Mexican food. But that’s fairly common in immigrant food traditions. Vertical roast originated in the Middle East around Turkey/Lebennon became kebabs in the UK, Döners in Germany, and Al Pastors in Mexico. Same origin, three different foods.

Depends on which era...i remember most Chinese food abroad were canton based back in the 90s.... Some meat with stir-fried rice or noodles

In the U.S., It's more Cantonese food. When I would fly from China to Hong Kong, it was like taking a break from Chinese food and getting to eat something delicious, and having access to the internet again.

It seems that at least here in the us, Hunan was a huge influence. Hunan was a huge influence via tiawan-hawaii-america with orange chicken being based on Tangarine chicken. Sesame apparently having heavy ties to sweet and sour pork. And the final in the famous chicken trinity is General tsos was also based on hunan flavors. Taiwanese influence was also huge, and by extension fujian influence.

A lot of Hunanese food is absolutely covered in chillies, and I can't really think of any dishes in American Chinese food that are similar to that. The only thing I can think of flavourwise that's similar to American Chinese food is 红烧肉, and even that is quite different texturally.

Vancouver is pretty damn good. It's all the HKers, but there's a decent mainland population too. I think their ingredients are really good too. The sushi there is excellent and cheap.

Vancouver has I think North America’s oldest Chinatown. It has a rich history of Taishanese and Cantonese residents. It is probably one of the starting places trying to make Chinese compatible with local tastes and a very long history. It makes sense it taste the best to you since you are from that area.

It's not just that there's a long history of immigration, it's that there's an ONGOING history of immigration. There are a TON of Chinese people living in Vancouver. Some neighbourhoods are 49% Chinese, making them the actual majority. It's not uncommon to see signs written only in Chinese. There are families that have been here for hundreds of years and families that just got off a plane last week. The majority used to be Cantonese speaking but I think Mandarin speakers have officially surpassed them in the census.

I would describe it as food with Chinese characteristics. I like it, but I also don't view it as Chinese food. It's only natural for food to evolve and change and accommodate new pallets and ingredients and in this process it becomes something new and distinctly different.

I went to Groningen, Netherlands 10 years ago, and the "Chinese Food" there is horrible. Most of Chinese students learn how to cook themselves.

I live in Vancouver now. Chinese food is closer to what we expect back in China. Some Cantonese restaurants are even considered better because they have experienced chefs with traditional cooking skills. Toronto has more and better Non-Cantonese Chinese restaurants.

The American Chinese food is one cuisine to itself, continuously evolving. It is mostly Yue or Guangdong/Toisan/Hong Kong cuisine americanized. It is now mostly Hokchew people opening the shops and adding Min or Hokchew dishes on top of it.

Food fusion is not a bad thing. Most food today is a result of combining other nation's food / ingredients , with the adaptation of local tastes. As long as a new creation of food can survive in a local market, then it is not that bad.

They are different cuisines. Can be delicious, but basically not the same food. Most American Chinese food doesn’t really exist in China, some have been reverse imported to China lol. Also, there’s not really a singular cuisine that’s “Chinese food” within China. Other than maybe imperial banquet cooking? And maybe some home cooking dishes not often seen in restaurants like tomato eggs. There are at least 8 major cuisines within China and over 20 regional styles. So Irish Chinese, American Chinese, Cuban Chinese have evolved into their own thing over time. A Kinda like TexMex and CaliMex are their own thing that’s not the same as Mexican food. But that’s fairly common in immigrant food traditions. Vertical roast originated in the Middle East around Turkey/Lebennon became kebabs in the UK, Döners in Germany, and Al Pastors in Mexico. Same origin, three different foods.
