Because they are driven to it by the condition called pica. Pica is an unknowing search for nutrients via cravings which for many is a gravitation to junk food and/or excess food to gain the nutrients we are deficient in.It happens to all vertebrates too.
Pity this unknowing nutrient search will never be met for most of us any more. Those that eat more healthy are just better at restricting and saying no to the bad stuff. If you crave food it’s pica. Soil mineral depletion over the last century has played a roll in this phenomena. No matter what the mainstream healthcare complex does, no matter how many more gyms or health food stores get put up, or public health initiatives or taxes on junk food get implemented, the deteriorating health of people today will get worse if we are not nourished with the 100 plus essential nutrients we require for health. Especially chromium and vanadium deficiency which is the actual cause of obesity.

In many places in the world, junk food is made the most available to people, simply because it is in fact, the most profitable. You think food companies give a shit about your health? The vast majority of food isn't unhealthy, regularly eating too much of a particular food or regularly eating more food than you require is. There is no need for a healthy person to fetishize their food to such an extent that they have to count macros or worry about exact amounts of micro-nutrients.
Guess what? I just ate a big homemade scone with lashings of butter and strawberry jam, and I have absolutely no idea how many calories it contained or what was the exact ratio of fats carbs and protein or what if any micro-nutrients were in it. Why did I eat this "unhealthy" food? Because it is delicious, and I wanted to eat it, and you know what else? I didn't drop dead, I'm not overweight, and I have no chronic health problems.

Why do People Eat Unhealthy or Junk food knowing the fact that it will increase their weigh and make them Unhealthy?
That’s the way we are evolved. Humans have evolved to seek pleasure, avoid pain and expend the least amount of energy.
We have a reward center in the brain which lights up when dopamine (among other neurotransmitters) is released. This puts us into hyper-learning, we perceive this as something very good for our survival. Natural food, sex, connection, achievements etc releases an amount of dopamine so that we’ll learn that this is good for us. Processed foods, porn, social media etc causes abnormal dopamine release in your brain which makes it think that this is even better and more beneficial than the natural things.
Since we don’t want to waste energy in seeking these foods/activities out it’s very quickly delegated to our lower/reptilian brain, which operates on autopilot. We’ll unconsciously start consuming these things to get the satisfaction. Intellectually we know they aren’t good for us, but our brains think that we’re going to die if we don’t get them so they panic and ‘makes’ us eat anyway.

At the point I am writing this, the most upvoted answer is by Craig Good. I can find no real reason for this. His answer has no substance.
Mr. Good’s mantra is “all food is good.” Therefore I’m now labeling the so called “Twinkie diet” the Good diet.
So, ignore your metabolism. Ignore all those signs of metabolic syndrome. Eat twinkies - just don’t eat too many because it’s simply about calories.
The ketogenic diet has been studied extensively. It’s safe and effective. For people with things like metabolic syndrome and diabetes, it’s not just good - it can literally be a lifesaver.

Is Southern food unhealthy?
Here in the good ol’ US of A, southern food is considered comfort food.
Fried chicken, fried okra, shrimp & grits, fried catfish, chicken & dumplings, chicken fried steak with gravy, jambalaya and of course sides of cornbread & biscuits plus peach cobbler for dessert.
All of these southern staples are definitely on the unhealthy side — laden with calories and fat. Even the popular collard greens are cooked with ham hocks or salt pork. Oh yeah….. I forgot to mention all the wonderful barbecue styles of the southern states. Who can resist slow-smoked BBQ ribs, brisket, and chicken?
Southern food should be eaten in moderation — every now and then won’t hurt you.

I disagree with the answers below. It's actually better to eat 7 donuts in one sitting, as long as you're eating healthy meals the rest of the time or the rest of the week.
This is because every time you eat any sugary and processed foods, you spike insulin in your body. The more often you spike insulin, the more insulin resistance you become, and insulin resistance is at the root of most chronic modern diseases today like Type II diabetes and obesity.
Don't listen to everything registered dietitians tell you. They learn material that is outdated and exposed to research studies funded by large pharmaceutical and food companies who benefit from us being unhealthy. The old dogma eat 6 small meals a day is also the largest lie we've been told, because this also contributes to high insulin resistance in most Americans.

Is it selfish to eat unhealthy foods?
We’re living creatures. Everything we do is selfish at one level or another. Even if a person sacrifices their life for someone else or otherwise does something that might be considered selfless on some level, it’s still ultimately to live up to the “Big Lies” they’ve chosen for themselves and want to make real in the rest of the world.
Yes, it’s selfish on some level, but everything we do is arguably selfish.
On another level, food is very social. It can arguably be unselfish to potentially reduce your own health to help someone feel better by spending time with them over a shared dessert. Maybe someone who eats unhealthy food only to help other people feel better isn’t selfish.

How do I eat less sugar when almost everything in the grocery store contains huge amounts of sugar?
Meat, eggs and butter do not contain any added sugar. There are an increasing number of people in the world who practice a carnivore diet. And these things are all they eat. And they are healthy and they are losing weight. How about that? They eat no sugars and they eat no plants. They let the animals do that for them.
Another group of people eat the above and also some plants. they too are getting healthier and losing weight. They eat no sugar, no starchy vegetables, no grains, no seed oils and they are healthy individuals with improving bloodwork readings.

In general you will do best in the supermarket never to go into the aisles. Simply shop around the edges where you will find all the products that are raw, fresh, unprocessed and uncooked except maybe for bread.
Another way to manage your diet is to shop at greengrocers, farmers markets, butcher shops fishmongers and delicatessens. And stay out of supermarkets completely. You will have a more pleasant experience, get some air, and talk to the people who actually provide you with your food.
And finally there is one skill that you will need. learn how to cook for yourself. It is not that hard.
